Directions for Wiener & Bologna Production (25 lb. Batch):
- Grind 25 lbs. of chilled meat and fat through a coarse plate.
- Add Bag #1 and Bag #2 to the meat mixture.
- Mix thoroughly until the seasoning is evenly distributed and proper protein extraction is achieved.
- Emulsify the mixture using a bowl chopper, food processor, or emulsifier while gradually adding ice water as needed to maintain a cold temperature and achieve a smooth texture.
- Stuff into cellulose casings for wieners or fibrous casings for bologna.
- Smoke at low temperatures, gradually increasing smokehouse temperature until the product reaches an internal temperature of 155°F.
- Shower with cold water or place in an ice bath immediately after cooking to stop the cooking process.
- Refrigerate before peeling casings, slicing, or packaging.
Usage: Use both bags of seasoning for 25 lbs. of meat.
